Ingredients

  • 1 lb ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 3 potatoes, peeled and diced
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 cup frozen green beans
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a large pot over medium heat, cook the ground beef until browned. Drain excess fat.
  2. Add diced onion and minced garlic to the pot. Sauté for 2-3 minutes until fragrant.
  3. Stir in carrots, celery, and potatoes. Cook for another 5 minutes, stirring occasionally.
  4. Add diced tomatoes, beef broth, green beans, basil, salt, and black pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 30 minutes or until vegetables are tender.
  6. Taste and adjust seasoning if needed. Serve hot.

  • Ground turkey or chicken mince can be substituted for ground beef.
