- 1 medium onion, diced
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, chopped
- 3 potatoes, peeled and diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups beef broth
- 1 cup frozen green beans
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a large pot over medium heat, cook the ground beef until browned. Drain excess fat.
- Add diced onion and minced garlic to the pot. Sauté for 2-3 minutes until fragrant.
- Stir in carrots, celery, and potatoes. Cook for another 5 minutes, stirring occasionally.
- Add diced tomatoes, beef broth, green beans, basil, salt, and black pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 30 minutes or until vegetables are tender.
- Taste and adjust seasoning if needed. Serve hot.
Notes
- Can be made in a slow cooker.
- Ground turkey or chicken mince can be substituted for ground beef.
- For a thicker soup, simmer uncovered longer or mash some potatoes.
- Add noodles near the end of cooking time, adding extra broth if needed.
