- 4 salmon fillets
- 1 tablespoon olive oil
- 1 tablespoon butter
- 3 cloves garlic, minced
- 1/4 cup sun-dried tomatoes, chopped
- 1/2 cup chicken broth
- 3/4 cup heavy cream
- 1/2 cup grated parmesan cheese
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
- Salt and black pepper, to taste
Instructions
- Season salmon fillets with salt and black pepper.
- In a large skillet, heat olive oil and butter over medium heat.
- Sear salmon on both sides until golden brown and cooked through, then remove from skillet.
- Add more olive oil if needed, then sauté garlic and sun-dried tomatoes until fragrant.
- Pour in chicken broth and simmer for 2-3 minutes.
- Stir in heavy cream, parmesan cheese, Italian seasoning, and red pepper flakes. Simmer until sauce thickens slightly.
