- 24 chocolate sandwich cookies
- 6 tablespoons unsalted butter, melted
- 8 ounces cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream
- 1/2 cup raspberry preserves
- 1 package (3.9 oz) instant chocolate pudding mix
- 1 3/4 cups cold milk
- 1 container (8 oz) whipped topping, thawed
- 1 cup fresh raspberries
Instructions
- Crush chocolate sandwich cookies into fine crumbs using a food processor or by hand with a rolling pin.
- Combine cookie crumbs with melted butter and press into the bottom of a 9×13 inch dish to form the crust. Chill in the fridge.
- In a bowl, beat softened cream cheese with powdered sugar until smooth.
- In a separate bowl, whip the heavy cream until stiff peaks form, then fold in raspberry preserves.
- Gently fold the raspberry whipped cream into the cream cheese mixture until well combined. Spread this over the chilled crust.
- Whisk together the chocolate pudding mix and cold milk until thickened. Let it sit for 5 minutes.
- Spread the chocolate pudding over the raspberry cream layer.
- Top with a smooth layer of whipped topping.
- Garnish with fresh raspberries on top.
- Refrigerate the dessert for at least 4 hours or overnight before serving.
