- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons heavy cream (optional, for consistency)
Instructions
- Preheat your oven to 350°F (175°C). Line a cupcake pan with paper liners.
- In a medium bowl, sift together the flour, baking soda, salt, and cocoa powder. Set aside.
- In a large mixing bowl, whisk together the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until well combined.
- Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Avoid overmixing to maintain a tender texture.
- Evenly pour the batter into the prepared cupcake liners, filling each about two-thirds full.
- Place in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
- Remove from the oven and allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
- In a mixing bowl, beat the softened cream cheese and butter together until smooth. Gradually add the powdered sugar, mixing until fluffy and combined. Add vanilla extract and heavy cream (if desired) to achieve your preferred consistency.
