Description

Rice Krispie Chocolate Chip Cookies are a delightful treat that combines crispy cereal with chocolate chips.

Ingredients

Scale
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups Rice Krispies cereal
  • 3/4 cup chocolate chips (semi-sweet or milk)

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
  3. Mix in egg and vanilla until smooth.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gradually add to the wet mixture.
  5. Gently stir in Rice Krispies and chocolate chips, being careful not to crush the cereal too much.
  6. Scoop dough onto prepared baking sheets, spacing about 2 inches apart. Bake for 10–12 minutes, until edges are lightly golden.
  7. Let cookies rest on the pan for 5 minutes before transferring to a wire rack to cool completely.
