Description

Create the ultimate slow cooker chicken tacos with this straightforward recipe. Tender, juicy chicken is slow-cooked in a flavorful marinade, perfect for tacos, burritos, or meal prep. This easy crockpot chicken recipe is great for busy nights or family gatherings.


Ingredients

  • 2 pounds boneless, skinless chicken breasts
  • 1 packet taco seasoning
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 (10 ounce) can diced tomatoes and green chilies, undrained
  • 1/2 cup chicken broth
  • 1/4 cup salsa
  • 1 tablespoon lime juice
  • 810 taco shells or tortillas
  • Optional toppings: shredded lettuce, diced tomatoes, shredded cheese, sour cream, guacamole, salsa, chopped cilantro

Instructions

  1. Combine taco seasoning, chili powder, cumin, garlic powder, onion powder, salt, and pepper in a small bowl. Rub the chicken breasts with the spice mixture.
  2. Place the seasoned chicken breasts in your slow cooker.
  3. In a separate bowl, mix together the diced tomatoes and green chilies, chicken broth, salsa, and lime juice.
  4. Pour the liquid mixture over the chicken in the slow cooker.
  5. Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the chicken is cooked through and tender.
  6. Remove the chicken from the slow cooker and shred it with two forks.
  7. Return the shredded chicken to the slow cooker and stir to coat with the sauce.
  8. Serve the slow cooker chicken taco filling in taco shells or tortillas with your favorite toppings.

Notes

  • For spicier slow cooker chicken tacos, add a pinch of cayenne pepper or a diced jalapeno to the slow cooker.
  • You can substitute boneless, skinless chicken thighs for chicken breasts. Adjust cooking time as needed.
