Description

This Snickers cake is a soft chocolate cake filled with homemade caramel and topped with peanut butter frosting and Snickers. It’s decadent and easy to make.


Ingredients

  • 1 cup All-purpose flour
  • 1/2 cup Dutch process cocoa powder
  • 1 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/2 tsp Salt
  • 1/2 cup Oil, canola or vegetable
  • 3/4 cup White granulated sugar
  • 1 tsp Pure vanilla extract
  • 2 Large eggs, room temperature
  • 1/4 cup Sour cream, room temperature or Greek yogurt
  • 1/2 cup Buttermilk, room temperature
  • 1/2 cup Hot water
  • 1 cup White granulated sugar (for caramel)
  • 4 TBSP Unsalted butter, room temperature (for caramel)
  • 1/2 cup Heavy cream, room temperature (for caramel)
  • 1/2 tsp Salt (for caramel)
  • 1 tsp Pure vanilla extract (for caramel)
  • 1/2 cup Unsalted butter, room temperature (for frosting)
  • 1/2 cup Peanut butter, creamy
  • 1 cup Powdered sugar, sifted
  • 1 tsp Pure vanilla extract (for frosting)
  • 1 TBSP Heavy cream (for frosting)
  • Fun size Snickers, for decorating

Instructions

  1. Preheat the oven to 350°F. Spray one 8 inch cake pan with nonstick spray and line the bottom with parchment paper.
  2. Sift flour, cocoa powder, baking powder, baking soda, and salt in a mixing bowl.
  3. In another bowl, mix oil, sugar, vanilla, eggs, sour cream, and buttermilk. Add hot water and mix.
  4. Combine dry ingredients with wet ingredients and whisk until combined.
  5. Pour the batter into the pan and bake for 38-43 minutes. Let it cool in the pan for 10 minutes before transferring to a cooling rack.
  6. To make caramel, melt sugar in a medium saucepan over medium heat. Mix until all sugar is melted and turns amber. Remove from heat.
  7. Add butter and then cream gradually, mixing well. Stir in vanilla and salt. Let it cool completely.
  8. For frosting, sift powdered sugar into a bowl. Beat butter and peanut butter until creamy. Add powdered sugar, vanilla, and cream. Beat until creamy.
  9. Cut the top of the cake to make it flat. Poke holes into the cake and fill them with caramel using a piping bag.
  10. Spread the peanut butter frosting on top and decorate with Snickers.

Notes

  • Do not compress flour when measuring.
  • Dairy ingredients should be at room temperature.
  • Caramel can be made ahead of time.
  • Make frosting right before use.
