Thick, soft-baked sugar cookies loaded with festive sprinkles and topped with a velvety, tangy cream cheese frosting.

- 255 g All-purpose flour
- 1/4 tsp Baking powder
- 1/2 tsp Baking soda
- 1/4 tsp Salt
- 140 g Unsalted butter (softened)
- 170 g Granulated sugar
- 1 Large egg (room temperature)
- 1.5 tsp Vanilla extract
- 1/2 tsp Almond extract (optional)
- 100 g Valentine’s sprinkles (plus extra for topping)
- 170 g Cream cheese (softened)
- 70 g Unsalted butter (softened)
- 227 g Powdered sugar (sifted)
- 1 tsp Vanilla extract
- 1 tbsp Heavy cream (or milk)
- Pinch of salt
Instructions
- Cream Butter & Sugar: In a large bowl, cream together the softened butter and granulated sugar for 2–3 minutes until light and fluffy.
- Add Wet Ingredients: Beat in the egg, vanilla extract, and almond extract until fully combined.
- Mix Dry Ingredients: Gradually add the flour, baking powder, baking soda, and salt. Mix on low speed until a soft dough forms.
- Add Sprinkles: Gently fold in the sprinkles with a spatula until evenly distributed.
- Chill: Cover the bowl and chill the dough in the refrigerator for at least 30 minutes.
- Preheat & Shape: Preheat your oven to 180°C (160°C fan). Line two baking sheets with parchment paper. Scoop the dough into balls and flatten them slightly.
- Bake: Bake for 12–15 minutes, or until the edges are barely golden. Let them cool completely on a wire rack.
- Make Frosting: In a medium bowl, beat the softened cream cheese and butter until smooth. Add the powdered sugar, vanilla, salt, and heavy cream. Whisk until creamy.
- Frost & Decorate: Spread a thick layer of frosting over the cooled cookies and top with extra sprinkles.
