Description

Ingredients

  • 4 large sweet potatoes
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 stick unsalted butter
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Peel the sweet potatoes and slice them into thick, even rounds.
  2. In a large skillet or Dutch oven, melt the butter over medium heat. Add the brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Stir until sugars begin to dissolve.
  3. Layer the sweet potato slices into the caramel mixture, spooning syrup over the top to coat.
  4. Reduce the heat to low, cover, and simmer for 40 to 50 minutes. Stir occasionally and baste the sweet potatoes with the syrup.
  5. Once tender and glazed, remove from heat. Stir in the vanilla extract and let sit a few minutes before serving.
