- 4 large sweet potatoes
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 stick unsalted butter
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon vanilla extract
- 1/4 teaspoon salt
Instructions
- Peel the sweet potatoes and slice them into thick, even rounds.
- In a large skillet or Dutch oven, melt the butter over medium heat. Add the brown sugar, granulated sugar, cinnamon, nutmeg, and salt. Stir until sugars begin to dissolve.
- Layer the sweet potato slices into the caramel mixture, spooning syrup over the top to coat.
- Reduce the heat to low, cover, and simmer for 40 to 50 minutes. Stir occasionally and baste the sweet potatoes with the syrup.
- Once tender and glazed, remove from heat. Stir in the vanilla extract and let sit a few minutes before serving.
