- 2 medium sweet potatoes
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 1 red bell pepper
- 1 red onion
- 2 cloves garlic
- 1 can (15 oz) black beans
- 2 cups cooked rice
- 1 cup shredded cheese
- 1 lime
- Salt and pepper to taste
- Fresh cilantro (optional)
- Sliced jalapeños (optional)
Instructions
- Preheat oven to 400°F and line a baking sheet with parchment paper.
- Peel and dice sweet potatoes. Toss them with 1 tablespoon olive oil, paprika, cumin, and chili powder.
- Roast sweet potatoes for 20–25 minutes until tender and caramelized.
- In a large oven-safe skillet, heat remaining olive oil over medium heat.
- Sauté chopped red onion and bell pepper until soft and lightly charred.
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in black beans, cooked rice, and roasted sweet potatoes. Season with salt and pepper.
- Cook mixture for 5 minutes to allow flavors to meld.
- Sprinkle shredded cheese evenly on top.
- Broil for 2–3 minutes until cheese is melted and bubbly.
- Squeeze fresh lime juice over the skillet and garnish with cilantro or jalapeños.
- Serve hot.
