- 1 cup granulated sugar
- 1 large egg, at room temperature
- 1 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 3/4 cup all-purpose flour
- 1/2 teaspoon salt
Instructions
- In a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat until just combined, about 45 seconds.
- Incorporate the egg, vanilla extract, and almond extract into the mixture and beat well for about 1 minute until fully combined.
- Scrape down the sides of the bowl. Add the flour and salt and mix until combined, forming a smooth dough.
- Shape the dough into a flat disk and wrap it in plastic wrap. Refrigerate for at least one hour or overnight.
- Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
- On a floured surface, roll out the chilled dough to a thickness of 1/4 inch. Cut out cookie shapes and transfer to the baking sheets.
- Sprinkle the cookies with colored sugar if desired.
- Bake for 8 to 12 minutes until the edges are just golden brown.
- Let the cookies cool completely before frosting or serving.
