Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1 cup granulated sugar
  • 1 large egg, at room temperature
  • 1 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 3/4 cup all-purpose flour
  • 1/2 teaspoon salt

Instructions

  1. In a stand mixer fitted with the paddle attachment, combine the butter and sugar and beat until just combined, about 45 seconds.
  2. Incorporate the egg, vanilla extract, and almond extract into the mixture and beat well for about 1 minute until fully combined.
  3. Scrape down the sides of the bowl. Add the flour and salt and mix until combined, forming a smooth dough.
  4. Shape the dough into a flat disk and wrap it in plastic wrap. Refrigerate for at least one hour or overnight.
  5. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  6. On a floured surface, roll out the chilled dough to a thickness of 1/4 inch. Cut out cookie shapes and transfer to the baking sheets.
  7. Sprinkle the cookies with colored sugar if desired.
  8. Bake for 8 to 12 minutes until the edges are just golden brown.
  9. Let the cookies cool completely before frosting or serving.
