This Summer Kielbasa Pasta is a quick one-skillet dinner recipe packed with smoked kielbasa sausage, summer vegetables, and pasta, making it the perfect easy family meal for warm nights.

- 1 tablespoon olive oil
- 14 ounces kielbasa sausage, sliced
- 8 ounces pasta (rotini or penne)
- 1 cup cherry tomatoes, halved
- 1 cup corn kernels (fresh or frozen)
- 1 small zucchini, diced
- 2 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup reserved pasta water (as needed)
Instructions
- Heat olive oil in a large skillet over medium heat. Add sliced kielbasa and cook until browned on both sides, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add more olive oil if needed. Sauté garlic, then add cherry tomatoes, corn, and zucchini. Cook for 5 minutes or until vegetables are tender.
- Meanwhile, cook pasta in salted water according to package instructions. Reserve 1/2 cup of pasta water, then drain.
- Return kielbasa to the skillet. Add cooked pasta, reserved pasta water, and Parmesan cheese. Stir to coat evenly.
- Season with salt and pepper. Serve hot, garnished with extra Parmesan or basil if desired.
