- 2 cups cooked turkey, chopped
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 small onion, diced
- 1 cup peas
- 4 tablespoons butter
- 1/3 cup all-purpose flour
- 1 3/4 cups chicken or turkey broth
- 1/2 cup milk or cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 pie crusts or 1 sheet puff pastry
Instructions
- Preheat oven to 400°F.
- In a large skillet, melt butter and sauté onion, carrots, and celery until softened.
- Stir in flour to form a roux, then gradually whisk in broth and milk or cream.
- Simmer the mixture until thickened, then stir in the cooked turkey and peas. Season with salt and pepper.
- Place one crust into a pie dish. Pour the turkey mixture into the crust.
- Cover with the second crust or puff pastry. Seal the edges, crimp if desired, and cut slits to vent.
- Bake for 30–35 minutes until golden brown and bubbling.
- Let rest for 10 minutes before serving.
