A creamy and silky white queso dip that is perfect for dipping and sharing.

- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 1/2 cups whole milk
- 12 oz white American cheese (shredded or cubed)
- 1/2 cup Monterey Jack cheese (shredded)
- 1 4 oz can diced green chiles, drained
- 1/4 tsp ground cumin
- 1/4 tsp chili powder
- Salt (to taste)
- 1 tbsp chopped fresh cilantro (optional)
- Pickled jalapeños (diced, optional, for heat)
Instructions
- In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until smooth and lightly bubbling.
- Slowly pour in the milk while whisking constantly. Continue cooking for 3–4 minutes until the mixture thickens slightly.
- Reduce heat to low. Add the white American cheese and Monterey Jack, stirring until completely melted and smooth.
- Stir in green chiles, cumin, chili powder, and salt. Mix until well combined and creamy.
- Remove from heat and fold in cilantro and jalapeños if using. Serve warm with tortilla chips, soft pretzels, or drizzled over tacos.
Notes
- Adjust seasoning to your taste.
- For a spicier dip, add more jalapeños.
