Description

Ingredients

  • 2 tbsp all-purpose flour
  • 1 1/2 cups whole milk
  • 12 oz white American cheese (shredded or cubed)
  • 1/2 cup Monterey Jack cheese (shredded)
  • 1 4 oz can diced green chiles, drained
  • 1/4 tsp ground cumin
  • 1/4 tsp chili powder
  • Salt (to taste)
  • 1 tbsp chopped fresh cilantro (optional)
  • Pickled jalapeños (diced, optional, for heat)

Instructions

  1. In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 1 minute until smooth and lightly bubbling.
  2. Slowly pour in the milk while whisking constantly. Continue cooking for 3–4 minutes until the mixture thickens slightly.
  3. Reduce heat to low. Add the white American cheese and Monterey Jack, stirring until completely melted and smooth.
  4. Stir in green chiles, cumin, chili powder, and salt. Mix until well combined and creamy.
  5. Remove from heat and fold in cilantro and jalapeños if using. Serve warm with tortilla chips, soft pretzels, or drizzled over tacos.
