- 2 medium yellow squash, grated
- 1/2 cup shredded cheddar cheese
- 1/3 cup breadcrumbs
- 1 large egg
- 1/4 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup plain Greek yogurt
- 1 clove garlic, minced
- 1 tablespoon fresh lemon juice
- 1 tablespoon chopped fresh parsley
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place the grated yellow squash in a clean kitchen towel and squeeze out as much moisture as possible.
- In a large bowl, combine the squeezed squash, cheddar cheese, breadcrumbs, egg, garlic powder, salt, and black pepper. Mix until well combined.
- Shape the mixture into small tot shapes and arrange them on the prepared baking sheet.
- Bake for 22-25 minutes, turning halfway through, until golden and crisp.
- Meanwhile, make the garlicky yogurt dip by mixing Greek yogurt, minced garlic, lemon juice, and parsley in a small bowl.
- Serve the yellow squash tots warm with the dip.
Notes
- Don’t over-squeeze the squash to avoid dry tots.
- If the mixture seems too loose, add a few more breadcrumbs.
- For air frying, keep tots small and spray generously with oil.
- Rewarm cooled tots in the oven for a few minutes to regain crispness.
- Leftover tots can be stored in the fridge for 2-3 days and reheated in the oven.
- The dip is also good in the fridge for three days.
