Description

Enjoy these crispy, golden yellow squash tots served with a creamy garlicky yogurt dip. These bite-sized snacks are perfect as a healthy appetizer, side dish, or party treat.


Ingredients

  • 2 medium yellow squash, grated
  • 1/2 cup shredded cheddar cheese
  • 1/3 cup breadcrumbs
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Place the grated yellow squash in a clean kitchen towel and squeeze out as much moisture as possible.
  3. In a large bowl, combine the squeezed squash, cheddar cheese, breadcrumbs, egg, garlic powder, salt, and black pepper. Mix until well combined.
  4. Shape the mixture into small tot shapes and arrange them on the prepared baking sheet.
  5. Bake for 22-25 minutes, turning halfway through, until golden and crisp.
  6. Meanwhile, make the garlicky yogurt dip by mixing Greek yogurt, minced garlic, lemon juice, and parsley in a small bowl.
  7. Serve the yellow squash tots warm with the dip.

Notes

  • Don’t over-squeeze the squash to avoid dry tots.
  • If the mixture seems too loose, add a few more breadcrumbs.
  • For air frying, keep tots small and spray generously with oil.
  • Rewarm cooled tots in the oven for a few minutes to regain crispness.
  • Leftover tots can be stored in the fridge for 2-3 days and reheated in the oven.
  • The dip is also good in the fridge for three days.
